Taco Soup
Ingredients
1 lb of ground beef
1 large chopped onion
1 can of corn 15.25 oz
1 can of pinto beans 15.5 oz
1 can of kidney beans 15.5 oz
1 can of Rotel tomatoes 10 oz
1 can of green chilies 4 oz
1 can of diced tomatoes 14.5 oz
1 box of Beef broth 32 oz
1 pk of Taco Seasoning
1 pk of Ranch seasoning (hidden valley)
Bag of Fritos Chips (Corn chips)
Toppings
Shredded cheese
Sour Cream

Directions
- Heat a large pot over medium-high heat cook ground beef.
- Cook until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
- Add chopped onion and cook until it’s transparent.
- Add the corn, pinto beans, kidney beans, Rotel, green chiles, diced tomatoes, broth, packet of taco seasoning and packet of Hidden Valley Ranch original seasoning. Mix well and bring to a boil, stirring occasionally.
- Reduce heat to low and simmer for about 30 minutes.
- Add Fritos chips into soup bowl, ladle soup over the chips.
- Garnish with shredded cheese, sour cream and chives, if desired.
